I've picked lots of tomatoes over the last few days, and had beetroot also ready for eating.

All ideas welcome to highlight them in a meal.

Dry the tomatoes in the oven and then into good oil with seasoning and some picked thyme leaves. Roast the beetroot with garlic, thyme etc

Some nice goats cheese in chunks blow torched with above and good mixed salad leaves.

Best done in the next 24hrs before Winter sets in.

Beetroot also goes very nicely with smoked fish

Good call, smoked mackerel could replace the goats cheese if OP doesn't like it, add in a few salad potatoes and its a more substantial meal as well.
