Bit of an impulse buy after a few beers, does anyone have any venison ideas? The rack and chops I can deal with, more the "legs" I need help with. Cook them like a leg of lamb? There is also what looks like belly with some ribs and a bag of bones with some meat on.

I would dice up the legand make a stew with a port and red wine gravy.

The bones either take out the marrow and make burgers/meatballs or put them in a pan and make stock or soup

Love a venison burger from any leftovers. We used to make muntjac pastrami as well, definitely a staff favourite.
Stews are a good shout.

I've had and seen Venison steamed pudding recently ... ground venison, like mince beef in a suet pastry... little individual ones...

Juniper is another flavour that works well with venison, fwiw.

I've watched a youtube video about how to separate the leg into lots of individual cuts (muscles) and then they can be cooked in different ways. As always, they make it look easy!

I've been taken through the butchering of a whole deer.

get the last bits off the bones and use it in the same way you would use duck in Chinese pancakes with spring onions etc

Shoulder - dice and long cook in casserole [red wine]

Haunch - either cut into joints or cook whole [do not cook too long else will be tough]

Steaks - as per normal

Loin / backstrap - flash fry until pink

Mince - balls [mixed with pork] in tomato sauce; chilli; bolognese

Diced - casserole; pie; curry

The limbs look a tad bloody [I hope that is not congealed else cut it out or hit who ever you bought off across the head]

Cutting deer into the relevant cuts / cooking joints is the easiest of all animals.

Please remember that venison is very lean and doesn't like over cooking except in the case of diced shoulder etc.
