Looking for v good quality multi ply pans

Just bought an induction cooker.
Currently have a mish mash of pans, some work well, some not so much
All very old, scratched and past their best.
Would like to find some really high quality "last a lifetime" pans - a full set.
Ideally multi ply, with a copper core, metal handles that can go in the oven etc etc
Stainless rather than non stick.
Can't quite find what i'm looking for in the usual suspects like John Lewis- where should i be looking to get really good stuff?
Haven't yet managed to buy a saute pan that doesn't warp! Would be a dream to find one that doesn't.....
A non stick frying pan might be the only exception to the stainless steel thing......

Most brands do their ply with Aluminium sandwiched in, not copper and Le Creuset does the job for many. Ideally multi ply, with a copper core, metal handles that can go in the oven etc etc

Don't think it matters so much, but if you want Stainless with copper then look at brands like All-Clad and their D5 range. If you want pans that are copper exteriors but with Induction bases, then look at brands like Mauviel.
If you are looking at Copper than you are probably looking for responsive cooking, but just to say don't overlook season/enameled Cast Iron as can go straight from hob to oven (to higher temps than stainless) to table and even on your BBQ, stays warm for longer too. Spun Iron such as Netherton Foundry is lighter than Cast Iron if that's a factor. Get a good cast iron frying pan too.

I agree with both the above posters, that Borough Kitchen is a good place to start. Divertimenti is the other place that used to be great, but I haven't been for a few years so I can't comment on whether or not they're still good.
I have one Mauviel saute pan, a fairly small one. I bought it in the sales about 10 years ago as it appeared to be a bargain. I have to re-calibrate my approach whenever I use it. The hob needs to be 2 or 3 settings lower than any other pan I've got. It is just awesome. If you can afford a set then go for it.

Samuel Groves. I use the stainless ones on my AEG induction hob and they are a revelation. British made, built like a tank.
Non stick pans I've resigned to the fact they they simply don't last so I accept that I have to replace them every 2-3 years.
Best pans I have are some £30 home starter kit 'go cook' pans that I bought on a whim for my first house from Tescos about 16 years ago. They have and continue to outlast some of the Tefal s
te that was supposed to be superior!

Le Crueset are fantastic but double the price of most other suff, so un-necessary expense.

Enough left in the budget for a roasting tray as well. Problem with copper pans is you need to keep them looking nice and not throw in a drawer (which is what I do with pans).
May need to buget for a scullery maid to maintain them.
These are the scanpan ones I thought of, Scanpan Axis, 5 ply copper core. But... can only find them in AUS so even though the are reasonably priced postage might be an issue! Might be worth an email to scanpan to see if they can supply.

I had one of these Mauviel s/s pans for Christmas, very impressed with it so far.
Cleans up like new even after heavy use/ high temp searing etc.
