I really should know this, but i cant remember.

Got a beef mince spag bol in the freezer, homemade by the wife.

Can I heat it gently from frozen, or do i need to defrost first?

Cooked from frozen is fine. Make sure it’s hot (+75 degrees C for at least 3 minutes, if memory serves) and enjoy.

I cook batch made mince from frozen all the time, both pan and microwave.

Never considered why you shouldn’t?

Ideally chuck it in fridge overnight to defrost then heat gently to at least 75C (as above) stir regularly to avoid the lava effect.

Alternatively defrost in a microwave before reheating.

Issue with heating on the hob from frozen is the centre will still be frozen as you burn what defrosts because you'll whack the heat up in frustration.

Another way, into the oven at about 120 (for ages) which will defrost and reheat.

What ever way just get it gently bubbling for a few minutes after its all defrosted.

You can reheat from frozen on a med-low hear. Add a cup of water to the pan to stop it catching; keep the lid on to use the steam.

Or microwave on defrost and then heat in the pan.

Generally always plan ahead and take out of the freezer in the morning so it's defrosted and ready to go when i get home

I've got a frozen log of ragu on the hob as we speak. Should be ok so long as you do it nice and slowly.

Very disappointed...more on that shortly.

I took a view on both methods, and started to defrost in the microwave. But it seemed to be getting quite hot around the edges anyway, so I put it in the pan and did it that way.

And I was very disappointed because it was chilli, not spag bol!!

i prefer to freeze mine flat into ziplock bags as individual portions. it'll thaw out in minutes if you chuck it in a big bowl with water.

Colleague came to work with a frozen box of beef stew which he microwaved for lunch.

Turned out it was a box of gravy. Oh, how we laughed.

Role reversal in my house. My wife uses a proper label maker for home cooked stuff. I just prefer to live dangerously.
