Merguez sausages - I think I screwed up

I'm a fan of Merguez sausages but had only ever had them when out. This week I ordered some to cook up at home. Made them today and we enjoyed them, nice and meaty with a spicy kick. All good so far...
The missus then asked something along the lines of what's in them. My response...Lamb. Didn't think they contained anything else (other than the herbs and spices).
Later on, I figure I should fact check myself. Turns out they've got beef in them too.
The problem: The missus doesn't eat beef on "religious" grounds. I say that in quotes because she's not religious at all, it's more that she's just been brought up to not eat beef.
The conundrum: Do I fess up?
The missus then asked something along the lines of what's in them. My response...Lamb. Didn't think they contained anything else (other than the herbs and spices).
Later on, I figure I should fact check myself. Turns out they've got beef in them too.

Nope. In 1999 I cooked a meal containing pork, and as my muslim mate was munching it down I had that horrible moment of realization. I fessed up a couple of years ago thinking I’d get it off my chest and he’d be ok about it given the time passed.
I was wrong, he was absolutely raging and it’s still something we don’t mention. He was more angry that I’d told him, as if I hadn’t then it wouldn’t have been on his conscience etc.
Moral is not to take other people’s beliefs lightly, and certainly keep it to yourself if you violate them!
You can get lamb only merguez so check the label next time and she’ll be none the wiser

They were good but different to the ones I've had in the past. Not as sweet. Released A LOT of fat during cooking too.

To be honest, when I bought them, I didn't realise they were Lidgate's. I thought Lidgate's were supposed to be the absolute dog's b

They were good (in that I didn't regret buying / eating them), but they weren't knock my socks off good.

I would confess, contrary to what other people have said here.
What if she says lets have those lovely sausages you made last time or orders them herself or finds out the ingredients from some other means in the future.
What will you say then? You could play dumb and she might go well you know I don't eat beef so didn't you check.
If you're with someone and they can't eat specific things, be they for religious/moral or health/allergy issues then as their partner it's your duty to lookout for them as well and they are trusting you to do so.
Just apologise and say you will be more vigilant in the future, if as you says she's not that religious and guessing bought up in Hindu or Sikh religion so not eating beef/meat then hopefully she will understand you made an honest mistake.
From my knowledge of religions, I'd try and make them understand though that if someone is following a veg/kosher/halal diet for religious reasons and they ate/drank something that isn't permissable then I believe it is ok as they did it unknowingly and it's not classed as a sin and they shouldn't feel bad.
However I can understand how they still might be pissed but they need to get over it as no harm done.
Just last week a mate of mine told me how she's been a vegetarian for the past few years and her husband bought some pastries that had meat in them which she ate by accident, she was upset about it as she had avoided meat for ages now and her fella was gutted too.
It's made them extra careful with him double checking what he's buying and her double checking what she is eating and you can do the same in the future.
