Apologies if there’s already a thread on this subject but I can’t do a search at the moment… so, this is my first year of pickling onions (and eggs actually)… used Sarsons pickling malt vinegar (which is already spiced), home grown cayenne chilli, mustard seeds, black peppercorns, and home grown bay leaf… left it three weeks before opening first jar.. fecking things blew my head off… but.. bloody lovely… any other pickled onion officianado’s out there?

Yep, love them.

My mrs. does some lovely pickled shallots that take your head off and are so addictive. There's a big jar under the stairs at the moment that should be perfect for Christmas.

Tried gherkins this year but not sure what went wrong with them, they just became hollow. frown

I am definitely climbing aboard the "pickle train". My late mum used to pickle all kinds of veg back in the sixties/seventies. One of my favourites was sliced, pickled cucumber in a sandwich with cold roast beef from the Sunday dinner. My wife (from Iran) pickles cauliflower, garlic, onions, mini cucumbers etc. However, I like spicy stuff, so may well go down the pickled shallot route, maybe adding scotch bonnets for a bit of a kick, because they add a bit of fruityness.

I have some form of pickles most days now but not got to the stage of making my own!

M&S do jars of pickled sliced red onions and they are as sweet as sugar ….
