Just had a mail for Sainsburys to say that my extra large Turkey is unavailable, and that Ive been substituted a medium.

Looking on the Sainsburys website, nearly all turkey is unavailable / out of stock.

I guess bird flu has struck the supply chain ?.

It was in the news about a week ago maybe. But yeah, basically bird flu has impacted it

A couple of days ago there was a news item that small suppliers had plenty and were getting fed up with large producers who they reckoned were trying to panic customers into early purchases.

Whom to believe?

Both could theoretically be true. Big players could have shortages and people may not be thinking to check with smaller suppliers. Them getting in the news is a good PR/visibility move.

No bad thing really.

I know turkey is traditional, but it's awful. Would much rather have chicken, or beef for that matter. In fact thinking about it, lamb, or even pork before turkey.

There's nothing wrong with turkey provided it's brined before cooking.

I agree if you’re taking about supermarket turkey but a decent free range Turkey tastes nothing like the bland crap you get in supermarkets.
