I’ve just made and eaten the best omelette I’ve ever had.

The simple method was to fry grated cheddar first and then pour the beaten eggs on top.

That’s it but it created a lovely crispy cheesy crust with a soft fluffy centre.

Maybe others have always done this but my little mind is blown.

Been on the sauce, a sniff of the barmaids apron at lunch time, there seems to be a distinct lack of details to back up this new found revelation.

Sounds good, I will try that. I like adding some grated cheese to the top of a toasty.

It works pretty well! Egg and cheese is a bit of a keto staple bread substitute.

In this instance I'd prepare it as per OP, then chuck more cheese, tomato, mushroom, chillies and whatever other toppings I fancy, then grill the whole lot for a few minutes. Or fold it into a calzone.

These cheese crusts/crisps have been on trend the past year or 2 for lots of things. instead of just adding a slice of cheddar cheese to a burger some will let it lightly fry in the pan so it can dry, concentrate and develop a slight crust. key is to not let it burn otherwise it's ruined.
