OK Thyme. I make lemon and thyme butter for roast chicken and it can be a pain in the buttocks to pick the leaves.

Last thyme, I froze the packet the night before, took it out and rustled it between hands. Hey presto! All the leaves came off the stalks.

You could use a fork, or pull the stems through one of the holes on a cheese grater.

The leaves go black when they're frozen.
