I live on my own, am not particularly interested in cooking and so finding interesting nice things for supper is always a challenge. One of my regular easy healthy meals is salmon fillets with boiled potatoes and green salad (or broccoli), tarted up with black pepper and a splurge of Hellmans. But the salmon, which I microwave because it's quick and it works, is rather bland. What simple way to add flavour would you suggest for a catering idiot?

Sprinkle a little fresh thyme over before cooking; I assume you re already seasoning with salt and pepper.

Wow that was quick. But I'm not sure the Coop sells watercress. What I'd like to do is get more flavour into the salmon somehow.

Fry it in a non-stick pan in a tiny amount of sesame oil.

The night before coat your salmon in equal parts honey and soy sauce and cover and put in the fridge until ready to cook.

Or
Spritz your salmon with lemon juice and fresh ground black pepper. Put the lemon juice on first so your pepper sticks and doesnt get washed off.

This recipe is one of my favourites and usually serve it with boiled potatoes, broccoli and carrots. So similar to what you do already. It's really easy and can be done in just 20 minutes total.

I cook the salmon on baking paper in the oven for just 15-20 minutes.



I don't bother with the spring onions and have the steamed veg instead of the proposed stir fry.

If you want to improve the flavour of the fish itself use a simple wet brine. Water with 5% salt & 5% sugar. Let the salmon sit in that for half an hour before cooking. If you like the flavour try up to an hour or more next time.

Farmed salmon needs all the help it can get.

I always do mine in the oven rather than microwave. Just wrap them in foil with a smear of butter and a pinch of salt.

I think cooking it any other way apart from microwaving would improve it immensely.
(Don't boil it).

Season with cajun and black pepper, place a slice of lemon on top and wrap in foil for oven cooking.

Get an air fryer , and now fall is here a slow cooker/instant pot .Salmon marinaded in honey soy sauce sweet chili sauce and fried for 10 mins ish . Instant pot comes with recipes , and there are multiple on YT . Fill ya boots and enjoy .

If you don't enjoy cooking but like good food have a look at a thermomix. The older model is on offer with some decent freebies thrown in atm.

Choose recipes for the week, create a shopping list, buy stuff and then follow the instructions for each dish and it cooks it. We have one, I've just bought one for my daughter and her chap and it's a game changer. All the faffy challenging stuff like sauces are a doddle. You'll end up ditching ready meals and cooking fresh. I've no affiliation and I was sceptical when a mate put me on to them years ago, but I wouldn't be without it. You can also contact a local agent and they'll come round and do a demo and cook you dinner...

I was just about to say something similar. They are incredible machines.

We have one and you can, with zero skill, turn out pretty much any meal you want.

I too was sceptical when my wife bought one, when she went away for a bit I used it and was immediately sold. Definitely have a look!
