Sous Vide inspiration?

Got a Sous Vide cooker for Christmas last year and because reasons I only got round to using it for the first time at the weekend just past. Did duck breasts in it, then finished in a pan to crisp the skin/fat. Very tasty, perfectly cooked and nice and tender.

Going to have a crack at steaks next but on the lookout for other inspiration for using it?

Confit duck always works well. Have a google of "Under Pressure" by Thomas Keller or "Modernist Cuisine". They are available for download if you hunt around.

No expert on sous vide, but if you did a good job on duck breasts, I would have thought steaks would be a doddle.

Try salmon. Works beautifully if you use olive oil and infuse with aromats.
