Then a taste test to check the taste/seasoning...........
Had to double up on the white pepper so glad I tried a bit.
As for "caul" well that's the kicker - my butcher and very good friend doesn't use anything and point blank refuses to wrap them in bacon for me. It's a standing joke between us to the point where anytime anybody comes into my local (next door to his shop) with a bag of meat I recommend them to try his faggots and add "not the ones on the shelf ask for his special ones wrapped in bacon!!" This usually ends up with a text off him on the lines "Dicky you f

t" 
Anyhow I digress - The ingredients are from another butcher down the road who previously had his shop and is sort of in with the joke
I'm using streaky bacon to wrap them in then cook later....................... I used to like them when we had them when I was a kid, they were always referred to as "Penny Duck" in our house, though I don't know why. I've got a pack of "Mr Brains" ones in the freezer I must remember to do something with - I hope they're as nice as I remember, but I think the ones we used to have were from a stall on the market so might be a bit closer to being properly made.

My Father used to have these from Oldham outdoor market, served on an oven-bottomed muffin (a type of bread roll) and they were known as a “Duck-a-muffin.” My bloody mouth is watering now!

Quick update as I've had a few beers :hic: Next step was to wrap them with the bacon and cook them. Simple enough until I opened (bloody expensive) packs of home cured streaky and saw how thick they were! So had to resort on brute force and a rolling pin which worked a treat...........

Plain sailing from there...........


Didn't have them for dinner much to Wifey's protests. Reason being I lost my bottom false teeth two weeks back (long story) and picking up my new set in the morning- so tomorrow's the day...................
