Going through the cupboard and finding stuff that is priced in £.s.d ( only joking)

But serious question. Whilst i am a believe in the dates given Sell by, best by, and use by. we have found a stack of the Knorr 'stock pots' The one that hold a small amount of jelly. either beef, chicken, fish etc
There are no dates on these and are at least a year old, possibly more

I am being over cautious in throwing these out? or are they really long term 'use by'

Given that they are essentially a "live" and wet animal product, then I wouldn't risk it, despite them having enough salt in to probably be ok.

The simple answer is to try it and report back.

The Knorr ones we have have a 'Best Before' date on the box, but the codes on the bottom of the pots themselves don't correspond...

Our are past the best before dates (both 2026 dates) but they'll still get used

If they're not mouldy, go for it. Worst case scenario is that it won't be as flavourful.
