Xmas day brunch help

Hi chaps,

I have been charged with Xmas day brunch for friends this year. The plan is, friends come over for a drink and a bite to eat, then we go on a long walk via a pub, and end up back at their house for christmas dinner a few hours later.

I need some easy (i.e. i can do preparation the day before, not Xmas morning!) ideas for a yummy brunch.

My plan was:

christmas spiced borscht with a shot of vodka
smoked trout on focacia soldiers with home made mayo
eggs benedict + a glass of champagne

like the trout, like the borscht, but the eggs seem a bit boring, plus i have to cook them. Any other ideas for a Xmas brunch?

I did eggs benedict last year went down very well, good english muffins, good free range eggs delicately poached with black pepper and a thick slice of quality ham and a dollop of hollandaise sauce :P Glass of champers with a dash of pomegranate juice rather than orange.

thanks for the ideas!

I think im going to go with scrambled eggs with wild mushrooms and some san daniele ham.

i like the champagne and pomegranate though!
