Vacuum packing food

I always struggle with freezing leftovers of food as plastic tubs take up loads of space in both the cupboard and the freezer and then go manky when microwaved.
I'm considering getting a decent vacuum packing machine so that I can freeze leftovers etc. into bags, the bags can then be put in hot water as "boil in the bag" or microwaved.
My nephew who is a trainee chef tells me it's quite common (and not just for sous vide) in the catering trade and allows portions of food to be re-heated quickly without getting dried out.
Has anyone tried this?
