Thinking of making some... Just to see whether I can do it.

Any decent recipes anyone has?

I've got a brisket of beef, but I'm gonna have to go without saltpetre because I can't find any anywhere. So I'll need salt... what else? How long do I leave it for? How often do I need to turn it? And finally... simmer, or bake?

It is available on Ebay,and maybe chemists or specilaist butchers you could try.
Alternatively you can make up a brine with ordinary sodium and spices but only keeps for about 5 days if you want to salt beef.

I buy mine locally, already made.

If you manage to do it, then I've got a fabby recipe for New York Corned Beef Hash that's great. Not recommended if you have a weak heart though!!

Any good Jewish cookbook or better yet Mother-in-law will have a recipe, my books are in England at the moment but try recipe sites on line.
