Just found this on metacafe......says it is the best way to make the most delicious steak, although I thought heavily salting meat before cooking made it tough? Anyone tried it....

So you sit it in a metric tonne of 'Ice Cream Salt' for an hour, then grill it on a BBQ?

Sounds like an ideal way to draw out all the natural juices in the meat before cooking it leaving it dry, salty and tough. Perhaps 'Ice Cream Salt' is something special I am not aware of?

could it be that the salt (which they wipe off after a little while) draws some moisture out of the immediate surface, thus making it seal better on the heat an keep the juices in?

Just for the record - it's not how i would cook it either!! biggrin

On different tack, the best steak I have ever eaten in a restaurant (any where in the world) must be Shanahans in Dublin

It's pretty good, alright but the prices are outrageous to the point where I can only relax and enjoy the meal if someone else is paying biggrin

It's so hard to find good steak in the uk, The Farm in fulham does a USG steak and that's great.
The best i have had is a Las Vegas in the Aladin other than that France does great beef and also Canada.

Longhorn is supposed to be the best in the UK

I agree, they charge like wounded buffalo, but it was great and I was not paying

I never order steak from a restaurant because I have yet to have a steak anywhere that I truly enjoyed. If it isn't perfect or hasn't had every last ounce of fat taken off of it I struggle to enjoy steak TBH, and when spending steak money I don't want to risk a meal I won't enjoy.

Know what everyones saying about restaurant steak, but I feel I had the exception in Manchester last week:

They brought the raw cuts of beef to the table, talked you through them, suggested how they should be cooked etc and then did exactly what you asked for. For once a rare steak was actually rare!
Would recommend to everyone.

Personally I rate gaucho with very low marks. They don't dry age their meat for a single day. They try to claim that "wet aging" does the same thing, but that totally untrue. I'd steer clear.

Perhaps our search for the perfect steak continues. I did rate the service and unique flavour combinations - would still say one of the better ones, especially for a chain.

I avoid it unless there's really nothing else I on the menu I want. What really annoys me is even the most ordinary chain restaurant in the US does steak that's way better than much of what you can get at any normal restaurant level in the UK, and it'll be a third to half the price.

I have never been to a gaucho but I have heard very good things about it.

As for Shanahans......extraordinarily expensive, tourist fodder IMHO.

If you are in Dublin give Chapter 1 a try (michelin starred)

try this
A bag with crushed peper salt (just a little) English mustard lots (2 table spoons)filit steak 1" - 2" thick mix and leave for 30 mins, hot pan with olive oil just as it starts to smoke steak in til seard both sides
thats how I like it the english mustard has klost its kick but it's still there

When I've been in there its been full of locals, and trust me a great steak

Plenty decent beef up here in Scotland!

Plenty decent beef up here in Scotland!
i'm sure there might be but i've yet to enjoy a steak that been feed only grass and hung for 10 minutes.

the yanks have lot's of trouble making cars that go around bend's but they are top of pile when it comes to skeak.
