Sharing's caring smile

I *like* soup, and below is one I made tonight.... but suggestions of how to augment / change / completely bdise would be appreciated.

Everything from Tesco... and this has made 9 x 500ml portions for the freezer(!) so it's a good thing it's tasty.

pack of celery x 2 @ 0.68
'finest' chorizo ring 250g @ 2.49
onion @ 0.30
Yorkshire carrots 1kg @ 0.78
(dried) red split lentils 500g @ 0.84
vege stock x 3 litres
couple of bits of garlic
blob of olive oil

Total of about £6. Ish. So I'd say about 60p a portion. How much is a tin of Heinz these days!? smile

Usual soupy approach... chop the onion, celery and carrots, and sweat them in the pan for a while with a bit of olive oil. When they're softening nicely, add the crushed garlic and the diced chorizo. Carry on sweating, maybe add a bit of water to help them along. After, ooh, 20 minutes add 3 litres of vege stock and the bag of lentils. Give it a stir and bring to the simmer. This is a smooth soup so after, say, another 20 minutes (or until the lentils have fully swollen) throw it in a blender and give it a blitz. And enjoy!

But what would *you* change?

I'd buy all the veg from my local farm shop thereby reducing the foodmiles by about 10,000 and then add a chicken, some dry cured ham and swap the vege 'stock' for some stock made from the chicken carcass. yum

Oh, and I'd serve it with a soft cottage loaf, heavily buttered.

Sounds nice but if it was me I'd swap the chorizo for smoked streaky bacon and the veggie stock for ham stock.

Oh and I agree about serving it with soft white bread and salted butter.

tend to get noodles from the chinese supermarket, add in veg such as brocoli, swweetcoen, diced onions, mushrooms, prawns, 2-3 cloves of garlic and or 1-2 birdseye chillis, chopped in with seeds

heat up and leave with a lot of liquid in it, the spice hits very well

What's the base of the soup? Water or stock?
