Why does it resist mold far better than it's white brethren?

Is it something to do with different additives perhaps? I had`nt thought about it until now but you`re dead right. Something I have noticed especially living on my own and not eating large amounts of bread.

I would have thought that white bread made with bleached flour would be more resistant than brown bread.

Duuno - brown bread should have more nutrients in it and so feed the fungi better. Maybe yours has preservative in it?

I would suggest that the white bread is loaded with all kinds of anti-fungal chemicals. Otherwise, all other things being equal, brown bread would grow mold faster.

It's got more chemical mould inhibitor in it (you know they only put that stuff in so they don't have to clean the slicing machines etc. as often).

I make my own bread and even the brown (50/50 wholemeal) is loverly!

Food is a matter of balance, and there are times when either white or brown bread is best.

Take a cooked breakfast of poached eggs, bacon, buttered toast, and ketchup/relish.

The crispness of the bacon and toast balances the smoothness of the eggs.

The fattiness of the bacon is tempered by the acidity of the ketchup (and possibly orange juice).

The greasy butter carries the flavours of the dry toast.

In this context, brown toast (ideally brown soda) works better than white, as it has the robustness to stand up against the other components of the dish.

So so wrong. Brown bread wrecks a cooked breakfast. EVERYONE knows you need triangular sliced pieces of cheap white toast smothered in marge standing in a little toast stand. Anything else is as wrong as violent bum sex (on man, by man).

yesBrown bread is bearable with marmalade, if there's no white left. There is never any excuse for brown soda bread.
