Anybody got one?

Mrs B&B lives on a low carb diet and really enjoyed the sugar free ice cream we had on holiday but shops don't see to stock it. I thought we might have a bash ourselves. All I can find are the cheap ice cream makers you put in the fridge and the self contained ones for £200+.

Anybody got one, and which are the best ones?

Got one that goes in the freezer and it works really well.

The drawbacks are the limited quantities you can make as it only stays cold for so long and of course you need to prepare 24 hours in advance to get it into the freezer. The ice creamand frozen yoghurt are great though.

I have some expeience with icecream wink

The ones you have to pre-freeze are, quite frankly, st.

Pay more and get one wiht a built in freezer. Very good. Not as good as an industrial one with what was essentially an outboard electic motor powering it.

A family friend has a Gaggia(sp?) and it's awesome.

I'm of the opinion that ones you freeze and then use, rather than are self-contained, are a compromise. Unless you're very dedicated, you'll probably end up using that one less than if you had one that you just powered on and away you go.

I saw one in M&S at the weekend for £99 I think it was - no idea what it's like I just thought I'd throw that out there.

This one?

Looks like it is a proper self contained jobbie. That might be the compromise I wan't although I understadn there is a make which gives Gaggia quality for a bit less money ( in Italy some Gaggia products trade under another name as I recall).

I am told the best 'in the fridge' one is the Phillips.

Ice cream kaer has arived, but nothing which says " This is how to make ice cream". It just says put the ingredients in, not what the ingredients are.

I have tried just puting cream with some sugar and vanilla and making it cold but that just tastes like very cold cream with vanilla extract and sugar in it, and not like 'ice cream' at all.

Should I thin the cream with milk, add an egg, stir it with my knob, chant satanic verses or chuck it in the bin and go back to Moriosns value brand?

One tin of condensed milk, one medium tub of double cream, a few drops of vanilla essence makes very rich ice cream.
Use the lite version of condensed milk, double cream, vanilla essence and add "some" semi-skimmed milk to make it lighter.

I have the Magimix maker with the built-in freezer. It could be better made (the motor is very noisy), but it makes great ice cream without waiting for anything to re-freeze.

I am hoping now I haven't burned the motor out as the paddle was frozen solid on that bizarre first batch.

You'll probably be surprised just how much sugar you need.

I made millionaires shortbread once (I think that's what it's called - basically shortbread, caramel then chocolate) and it used horrific amounts of sugar and butter. Tasted OK though.

Ours came with a recipe book and my favourite is a custard based ice cream:

3 egg yolks
75 g caster sugar
250ml Semi Skimmed Milk
250ml Double Cream
2.5ml Vanilla Essence

Add the sugar to the egg yolks and beat together in a glass bowl
Bring the milk to the boil in a pan
Add the milk to the egg yolks stir together and return to the pan
Bring the mixture to the boil and simmer - continually stirring to stop the mixture separating
When the mixture forms a thin layer on the back of the stirring spoon remove it from the heat and leave it to cool
When cold stir in the cream with the vanilla essence and pour the whole mixture into the ice cream maker with the paddle running to stop the mixture freezing immediately

I love this ice cream so much that I wrote all of the above from memory - that's how often I've made it. Of course it isn't a long and complicated recipe but I'm a bloke so any recipe committed to memory that doesn't involve "Place pizza on top shelf of oven and cook for 25 minutes" is impressive!

Enjoy.

Anybody remember some nearly pre-historic ice cream mix that you used to be able to buy? It was very white, and didn't resemble ice cream at all, but it was bloody gorgeous.

Thats the one. What was it called? I usually didn't even wait for it to set. I liked it when it was newly mixed, or just partially set.
