Crush garlic into butter, mix, put in some clingfilm, form into a 'pencil' and bung it in the freezer for half an hour.
Use the end of a sharp knife to cut a long thin hole through the breast.
Insert garlic butter.
Flour, eggs, and breadcrumbs. Last two twice if you want.
Probably 25mins at 180C (fan assisted, so maybe 20C hotter). Do check, obviously - raw chicken can make you very ill.

How? I've seen people put more butter on toast than you can stick into a chicken breast?poach in some water until cooked (add spring onions to the water for flavour). then chill in a bowl of ice until cold.
once cold, shred up until i looks like crispy duck in a chinese restaurant. Mix the cold shredded noodles with sesame oil, a very little soy sauce, salt and pepper.

Heat your grill, cut up an orange into segments, cut 3 slits in each breast and stuff a segment into each pocket. put orange side down in a baking dish and smear on a little clear honey. Grill for 7-10 minutes turn over and add a little more honey. Cook for a further 5 minutes or until chicken is cooked. Serve with rice or potatoes and veg or salad.
