Sick of tralling through cookbooks, I want a propper ecipe that you guys have tried and use!

I've used Jamie Oliver's and Giorgio Locatelli's, both very similar.

The key is to use Tipo 00 flour. I've never been able to find it in the big supermarkets, except Waitrose.

Tipo 00. 100g of flour to one egg. If you make 500g ish add an extra yolk. Mix together then wrap in clingfilm and stick in the fridge for an hour.

Run it through the thick setting on the roller a few times then roll down. Easy peasy.
