Pickled Onions

After peeling them, leave them steeped in salt overnight and then rinse and dry off before bottling.
Otherwise the onions will not keep so long.
Add peppercorns, chillies, sugar...whatever takes your fancy!!
Don't over do the flavours though as they have a long time to soak into the onions and can be quite strong a flavour enhancer!
