Hi all, I have some "pickling onions" and er, well, want to pickle them of course.

Any tips / techniques / advice would be appreciated!

Peel them, put them in a jar with malt vinegar and pickling spices (can be bought from any supermarket) - can also put dried chillies in. If you do them now they should be ready for christmas.

After peeling them, leave them steeped in salt overnight and then rinse and dry off before bottling.

Otherwise the onions will not keep so long.

Add peppercorns, chillies, sugar...whatever takes your fancy!!

Don't over do the flavours though as they have a long time to soak into the onions and can be quite strong a flavour enhancer!

Just done my first batch of the year.
