This smoked fish soup is a fairly local dish to me which I really enjoy, however I had never made until today. Tried keeping it as simple as possible, result was fantastic.

Given there are only a few locals to me on here thought I'd pass the recipe to the PH, Anyone else got any Local dishes they'd like to share.

250g Smoked Haddock, 3 Potatoes, I leek, half an onion, water & milk.

Method
Pour 500 ml boiling water over Haddock, leave at side to poach.
slice /chop leeks, onion & potatoes(fairly small) soften gently for ten minutes in butter
add water from haddock to vegetables & flake in the haddock too, season well (i also added teaspoon of veg stock powder) and simmer for 15mins until potatoes cooked. Puree with hand held blender (but leave some bits), add about 500ml of milk and leave on lowish heat for about 10 mins.
Served with fresh parsley.

It sounds great and although I've never tried it, have read about it in various cook books.

Where does the name come from?

I honestly don't think there is anything I would like to eat less. Apart from fish pie, which is essentially Cullen Skink with mash on top. Yarg. Fishy milk. hurl

I've got Cullen Sink for lunch today and I can't wait ! Unfortunatly mine is from a tin and not home made - still looking forward to it though !
