Aromatic Crispy Duck & Pancakes
Discussion
...Deserves its own thread. And yes, I did use the Search Function to check.
I am convinced it is the best-tasting combination ever:
Mandarin Pancake > Hoi-Sin sauce > Cucumber > Spring Onion > Shredded Crispy Aromatic Duck
We need to eat more of it
Also good with crispy seaweed (cabbage) added for extra texture!

I love crispy duck.
However, I believe a perfectly apportioned steak fajita has it beat.
Flour tortilla, slightly warmed - steak strips cooked medium, with onions, green and red peppers, all correctly seasoned - guacamole, sour cream, salsa

It comes close on flavour but misses by a mile on texture. (Add pork scratchings)However, I believe a perfectly apportioned steak fajita has it beat.

I've done it at home.
Just buy a couple of duck legs and roast 'em HOT until they come apart with two forks and have crispy skin. They're so fatty that you get the meat texture soft anyway. Plenty of cucumber, chopped spring onion and hoi-sin sauce and you are away.
Yes it isn't quite as good as that boiling with Star Anise thing but it's awfully close and much less effort.

Does anyone make their own at home?
I do fancy a go at it but I'm not sure I can be bothered with the whole boiling, hanging to dry for 3 days and then roasting process.
That said, the reward is pretty big.
I have a recipe that cuts down the drying to 12 hours by putting Mr. Quacky in front of a fan heater sent to "blow only" I do fancy a go at it but I'm not sure I can be bothered with the whole boiling, hanging to dry for 3 days and then roasting process.

Absolutely delicious dish, but not one that's better (or cheaper IMO) if you make it at home. You can dry the duck in a fan oven without heat; it's a faff but not hard. Those little pancakes though, are a b'stard. Only flour and water but you have to roll two small doughballs, oil them, then roll them together before peeling apart. Otherwise they're too thick. I found out too late that you can buy them frozen in Chinese supermarkets...

Never tried to do it at home, but used to get a pack from Morrisons that was quite good. A half duck ready dried that just needed a blast in the oven and asbestos fingers to pick off the meat as it's impossible to wait for it to cool down a bit before tucking in.Bought a frozen pack from Asda last week (their finest range, or whatever it's called), absolutely disgusting...
