Defrosted frozen food

I cooked a load of chicken for my 10 month old and froze it into cubes and then bagged it. I've just noticed that I've left a bag of frozen chicken cubes out which have, of course, defrosted (meaning my little one has no bloody chicken now)
Anyway - As it's only just defrosted - can I cook this up (properly) in a tomato sauce (or something) and re-freeze it?
And how long can I keep it in the fridge for as it's still fridge cold....

When I did my food hygiene certificate, it was told:-And how long can I keep it in the fridge for as it's still fridge cold....

That's it, cooked chicken should only be frozen once, so I would advise against cooking again and re-freezing, particularly for a child. Assuming it was frozen straight after it was cooked, I would say that it will keep okay for 2 days in the fridge.

Waitrose however advised my beloved that their (previously unfrozen) cooked chicken could only be
Eaten & then
Dustbin
Which created a bit of a debate with me/my parents/cousins etc over Christmas.
