I have a joint of venison left from Christmas, I was going to do it tonight just mulling over what to do with it, any ideas please its defrosting now

venison casserole made with fresh beef stock, soy sauce, veg, fresh thyme and rosemary then finished with a glass of red wine and cooked down for a couple of hours. goes well with mash or in a giant yorkshire pudding.

Not worth chopping up a decent venison joint for, but definately game pie with the leftovers.
