Got brother in law round tonight (with his posh wife)

We spent all last night preparing stuff, but the Apple Snow pre dessert thing we've done tastes like st, and isn't really a refreshing dish like we hoped.

Any ideas? Quick and easy - would like to avoid buying ready made

I'll list a couple of things I've done, if they seem appealing I'll post the recipe. I'm going to guess that sorbets are out, due to time - unless you have an ice cream maker?

Pineapple and Chilli Soup - (Gordon Ramsay)
Strawberry & Prosecco Terrine (French Laundry - I think)
Tiny Pear & Ginger Tarts - very easy to do
Individual Fig Tarte Tatin - also easy if you have ready made pastry in the freezer.
Lemon Syllabub served in a shot glass
Umm, I'll keep thinking...

Fresh fruit tempura - a doddle to do and ingredients easily available from the supermarket

I take back the Terrine option, based on your quick and easy request - it's neither!

Couple of raspberries, blackcurrants, strawberries etc in the bottom of a glass.

Mix up a syrup, add gelatine leaves and champagne.

Pour into glass, refrigerate.

Either that or a big fat spliff.

One of the two.

Any more detail on the menu? I'm a little confused about 'pre dessert'?

Sure, if you are French, that'll be the cheese course; they think we are barbarians for having the cheese afterwards. And, anyway, their women need a wash! wink

But, it is too late for a sorbet, and you haven't much time...

I reckon he's given up on help from PH and is in Tesco with a tub of lemon Swedish Glace in his hands. hehe

Okay guys, I had a moment of inspiration

I decided to use the 'innocent' fruit smoothie (blackcurrant, apple and something else) sling in some sugar and vodka, throw it in some shot glasses, stick it in the freezer and go with a sorbet type dish.

Worked a treat, and no messy mixing of berries etc, which under my time constraints was what I was trying to avoid.

Menu was as follows:

  • Sweet potato and carrot soup with creme fraiche and chilli oil - very small portion (Tanya Ramsay)
  • Seared scallops with roasted plum tomatoes, proscuito and bean/anchovi paste and rocket (Return of naked chef)
  • Chicken and leek pie with sausage meatballs + roasted veg and parsnip mash (Jamie Oliver green book)
  • Sorbet (see above)
  • Chocolate pots (wife's recipe)
  • Fresh coffee (new machine for xmas smile)

I dont eat a lot of fruit but adding chilli to it and turning it into soup eek

Im still waiting for someone to make a pork trifle so I can shoot them.

The description of it as a soup may be misleading, does this make it any more appealing?

Throw a bunch of grapes (black) in the freezer, when they are frozen the inside takes this sorbet type consistency & taste very very good.
