Vegetarian Stew and Dumplings

Just wondering what would be a good alternative from beef in a stew.

I am not vegetarian, but friend is, and just fancied making something like this that I just throw in the slow cooker.

So has anyone got any ideas, or even recipes would be great.

Butternut squash & sweet potatoes cut into chunks + pre-cooked beans of different sizes/shapes/colours, a good tasty veg stock + a can of chopped tomatoes and/or tomato puree, spices & seasoning to taste.

Don't forget to use vegetarian suet for the dumplings!

You're no fun! I've got my veggie OH buying veal...

If you are determined to do this, don't try to substitute for meat- it never works well. Just make a proper vegetarian dish.

You can make a very good veggie chilli with
  • an onion (chopped fine)
  • garlic
  • 1x can tomatoes (drained)
  • 1x can kidney beans (drained)
  • 1x can green lentils (drained)
  • 2x tsp cumin (ground)
  • 1x tsp cayenne

Does this friend cook meat for you when you go round there? If yes, try sweet potato, plantane and cubes of tofu and make peanut dumpings. If they refuse to cook you meat, tell them they are selfish c@nts and can f@ck right off if they think you are going to jump through hoops to satisfy this weeks half-arsed food trend because they read something in the Grauniad.

Try something like lentils, onion, maybe some garlic, aubergine and courgette with a tomato based sauce - if you google a recipe for vegetarian cottage pie the filling should make a good sauce

Nice. The plantane works well but you need strong flavours for the tofu to absorb. The other was meant to be a joke, but I forgot the smiley! smile

Its like being asked to cook cheese-on-toast for a vegan.

I admire your giving nature OP but there are limits old chap.
