Had a roast chicken yesterday, which means tasty toast and dripping for breakfast this morning.

Now everyone (and I mean everyone) I've yet mentioned this to turns their nose up at the very idea. I can't be the only person left who likes it surely? All that nice jelly, bit of salt....lovely. yum

Chicken Fat I throw away. Beef dripping, Duck and Goose Fat I keep for roast potatoes. Pork and Bacon fat is kept for frying. Lamb fat may be used for roasting - depends.

Get that a lot over here in Germany (Schmalz), but it's mainly made fron Goose fat and they put little bits of bacon in it too, spread it on some bread and add a little salt thumbup

You're going to have to qualify that one for me...

90+% fat doesn't necessarily strike me as the "healthy" option...

Not just fat - there's also all the jellyfied stuff that sets at the bottom. The fat is just like a butter/margarine substitute.

Manteca Colorá ("Coloured lard") on toast in Jerez was rather nice. Paprika flavoured and bright orange, yum smile
