Got given a load of sprats today....put them in the frying pan, toast at the ready....couldn't even take a mouthful without their being bones everywhere.

Cut the head off turn sprat on it's belly press down along the top of the back of the fish as if trying to flatten it. Turn the sprat over and remove the backbone from inside the belly cavity.

Lightly dust with flower and shallow fry or grill as desired, place on toast and virtually no bones to mention.

Same trick works with its bigger brother the herring too.

Peasant.

Just grill them whole (guts and all) and take the fillets off once cooked with a sharp knife.

Delicious mashed on brown toast with a squeeze of lemon juice, or simply as they are.

That's the one! Did the same technique with some fresh mackerel tonight; you do still end up with some small bones, but not many.
