There's currently a poll running in the Food forum, but as it's a bit of a backwater i thought i'd link it in here:

So how do you like your steak cooked

Currently it's looking like an interesting result.

As a sub question, are you a sauce fan with steak or just like it in it's own juice?

I like different cuts cooked differently i.e. Fillet Rare, Rib Eye Medium.

I'm stuck between a reduction of it's own juices kind of like an uber gravy or a nice thick and creamy peppercorn sauce.

Well seasoned - plenty of pepper - almost burnt on the outside, pink on the inside. No sauce.

Goddam I feel hungry now.

A good steak shouldn't be ruined by putting a sauce on it IMHO.

Rare for me.

I'd have cooked the (fillet?) with finely chopped garlic. Once cooked and resting, deglaze pan with white wine, a little water, smidge of a chicken stock cube. Add some honey and cream. Reduce to required consistency.

If you cook it with finely chopped garlic, the garlic would burn and turn bitter (unless you put it in right at the very end). The general consensus is that steaks should be cooked in a pan that's hotter than the surface of the sun, far too hot for frying the likes of garlic for any length of time.

Cremated. Burnt to a cinder and not a hint of pink.

I quite like the taste of it a bit rare, and I know a good steak 'well done' is sacrilege, but if there's any pink there it gives me the vicious squirts frown

Not really a sauce, but a blob of anchovy and garlic butter is fantastic on a fillet.

Unsalted butter, black pepper and then sear it on both sides, at high temp, leaving it pink-red on the inside.

Unless VERY fine steak which is VERY fresh, in which case I would have it tartare. But only to try and appear posher than I really am.

Why ruin a good steak. Just eat something else instead.

Why ruin a good steak. Just eat something else instead.

On a monolithically hot griddle, splash of vegetable oil on both sides of the meat, pinch of salt, pinch of pepper, well done smile

Happy with either sauce on or sauce not on biggrin

Family quite like different sauces and have a preference for either a brandy and cream sauce or blue cheese sauce.

I also occasionally prepare a fillet steak with a mushroom gratin topping (lifted from a Gordon Ramsey receipe).

I guess everyone has their own preference.
