Have been given a kilo of tuna steaks and am wondering how to cook them.

The only thing I can think of if griddling them with lemon juice, dill and cayenne pepper...

posted this before - but encrust them in sesame, Sear/blacken them, then slice thinly and serve on a bed of rocket with Wasabi mayo. Nom Nom Nom

Got a good, easy recipe here where you just coat both sides in crushed coriander seeds and peppercorns and griddle.

You serve on a grilled red onion and tomato mix (oil, coriander seeds crushed and salt to grill for 10 mins, loads of oil and some lemon juice mixed in when it comes out) with a handful of rocket on top.

Piece of piss.

Chargrilled with mango salsa on the side.

Mango salsa:

1 ripe mango
1 red onion
1 green chilli
bunch coriander
juice of 1 lime
pinch of sugar

Finely chop all ingredients to a size somewhere between dolly mixtures and sugar, then combine.

Very good soya sauce. Slice. Dip. Enjoy

Or marinade - Light soya sauce, dark soya sauce, rice wine vinegar, 1 garlic clove finely sliced, 1 spring onion finely sliced, a couple of drops of sesame oil and a tiny squeeze of lime.

Leave for at least 4 hours. Heat a griddle pan over a high heat for about 5 minutes. Sear the tuna on either side for about 40 seconds. Slice thinly and enjoy

You've eaten them by now so not a relevant answer! However, I would use a cast iron griddle pan (Le Creuset or similar) at full heat on the hob. Drizzle good olive oil over them with a tiny bit of sea salt & lots of cracked black peppercorns. No more than 30-45 seconds then turn them for another 45 secs. They will fall apart on the plate.
