Pizza Express Bases

I know there have been a few topics on pizza bases but does anyone know how Pizza Express make their pizza bases? I was there on Saturday night and honestly I could eat their pizzas 'till they came out of my ears. And don't get me started on the dough balls...

I know it's not high cuisine but it really does hit the spot.

i may have to get that, i never knew they had a book! bit pricey but may be worth a punt.
