I find I always end up with about 1/2 a jar of the vinegar left after finishing a jar of pickled onions.
If I was to put some more onions of a similar variety back into the same vinegar, would they also pickle? (although maybe to a lesser degree)

I use it on my chips. Don't see why you couldn't re use it for pickling, but making pickled onions is a bit more involved than just putting them in vinegar.

me too, what my missus used to think of as endearingly quirky has now apparently turned utterly disgusting. Women, can't kill 'em etc.

God I thought it was just me that was a bit weird and drank pickled vinegar.

Roll mop juices are fabulous too.........

I like to drink it too. 3 of us weirdos on here.

The other thing I do to use it is mix with olive oil (50/50) and use on a salad as a vinaigrette.

Yep, our local chippie sells bottles of the stuff. However I do try and decant my old pickled onion vinegar as and when the onions are gone.

Vinegar is the best thing for cleaning windows, leaving no streaks. That, or drink it.

Thats what I always use to clean the windows on my car, was a bit dubious until I tried it but it works really well!

Also a secret pickled onion vinegar drinker. Gherkin vinegar too.

Parents always told me I'd be sick.

Subsequently they discovered it was in fact too much alcohol which stimulated copious emesis in me. Although they didn't have to wash it off the front step did they? bds.
