Ok, so its not exactly reaching new heights in gastronomy, but it worked out very well, impressed the girlfriend, looked very swish and most importantly tasted awesome. It was also ludicrously easy, so anyone who isn't that confident in their kitchen skills could easily give it a go and hopefully raise their confidence. I'm not going to claim I made the recipe up, but a colleague was talking about doing something similar and I just wandered round sainsbury's and chucked a load of stuff in a basket and made my own version, so anyone can do their own take on it.

Ingredients -
  • Chicken breast fillets
  • Oyster mushrooms
  • Chilli's (Red/green/whatever really)
  • Red onion (Or shallots)
  • Creme Fraiche
  • Back bacon
Pre-heat the oven to approx 200 degrees. Finely chop the onions, sweat for a bit in some olive oil, throw in some shredded mushrooms and some chopped up chilli. Remove from heat and leave to cool a little bit. Open up the chicken breasts with a sharp knife, doesn't have to be too tidy because you are wrapping them anyway. Chuck some creme fraiche in with your slightly cooled onion/mushroom/chilli mix and stir it up. Lay two pieces of your bacon on a chopping board for each chicken breast, and place the breast in the middle. Fill with some of your mixture, then wrap tightly with the bacon. Place in a oven dish, bit of pepper and olive oil, throw in oven. Drink some beer or wine for 45 mins to an hour, and watch TV. Get out of oven when the bacon is really crispy and coloured. Serve with whatever you like really, I roasted some baby new potatoes and a nice salad with avocado and stuff. Soak up the praise, get blowjob later. Job done.

Sounds lick
I've tried similar with filling the breasts with Stilton & wrapping in bacon.
