How do vegetarians do it?

Sitting here eating my plate of "Vegetable Chili" which resembles mashed up yuck with a red kidney bean added for effect, I got to wondering how come vegetarians sit down to this kind of wholesome food on a daily, per meal basis?
To me, chili con carne is an absolute delight, but chili without the "con carne" is like Morcambe without Wise, Wayne without his World etc.
There can only be so many ways to dress up a vegetable... surely?!
(I'm really only talking about the preparation here, not slaughtering of innocent little bambi or whatever anti-meat ideals are floating around. I'm not anti meat, I think it tastes bloody lovely!)

I've got a veggie girlfriend, so have had to explore this area of food. Its really not too bad, it just gets a bit repetitive - middle eastern type food with grilled veg and hummus is nice (especially in pita wraps), as is hot and spicy chinese.
I think the problem with a lot of vegetarians is that they aren't really into food (being more "food as fuel" people) so they have very very boring diets. Then again, their meat eating counterparts survive on chicken ready meals which are pretty awful too.

You can make a decent vegetarian chilli by substituting lentils for the beef. It isn't quite as good, but it can be pretty good. Just don't try the chocolate trick. That said, most other vegetarian versions of normal dishes are ghastly, with vegetarian burgers/sausages/bacon right at the bottom.
Most British vegetarians*, in my experience, just don't care much about what they eat; they never learned to care about food so it all tastes much the same.

ooh never thought about that before.might have to try it, but do you have the bacon really crispy? as Im guessing if its chewy and has the stringy fat (that I hate) then it would pull apart and leave you with 2 bits of toast?
