Help Required - Chilled Snack Ideas

I am working with the NPD dept on a new project idea at work but thought I would put this out to PH and get some ideas as to what the mass would generally want during the mad rush at lunch.
My main focus are the snack items you will find in the fridge section of the supermarket for example sausages with a tomato ketchup dip, Grape bags, Yogurt and Granola, vegetable dip pot, fruit salads etc
Anything to do with prep fruit and veg is not a problem for us however making a cheesecake would be (unless we buy it whole and cut in house) also I need to keep it relatively healthy (ish).
So far I have:
Fresh Cut Fruit and Yogurt (I know.. it is not very er.. innovative)
Maybe Cheese and Cracker selection?
Small Pasta Pots (snack size)
Any ideas greatly appreciated!!!

jelly...? fresh fruit in jelly looks very appealing and fat free
again needs to go in clear cup with lid
plus salted tortillas- bake or fry if you have the facilities and then salt them, they can go in a bag like crisps and easy to munch on as you go.
popcorn, very healthy, cheap and easy, another good one to munch on
what about mini snacks like small chopped flapjacks or mini rice krispie cakes, I know it breaks the healthy rules..

Out factory is not really built for cheesecake making. We would prob buy bulk from a supplier and decant in house.Also not sure what the implications would be on the technical side of things if we were to make in house - But I could ask the question and get Q.C to have a look at it.

I think we tried some Jelly ideas with fruit and they did look quite nice but the cost to customer was not again needs to go in clear cup with lid

Again there maybe technical issues with making jelly in house since it is not a regular item of ours.I love mini snacks.. hmmm Maybe mixture of mini flap jacks with mini brownies and mini something else (caramel squares) in a clear round container with lid (Just chucked the healthy thing right out the window).
