Most Brits cannot make a decent salad; undressed leaves and tomatoes straight from the fridge. It is possible to make good ones, the Italians and French do it very well. But they use dressings well and pack in more varied, and fresh, ingredients.You can do some fun stuff with (cooked) pulses (warm in a pan with a little oil and garlic), red onion, sweetcorn, and lime/lemon juice for a bit of zing. Or just cook your beans and mash them as a substitute for the real thing.

Small portions of salad, plenty of cheeses and stuff to go with it that you can have too that are low carb. I tend to stick with mozarella and feta.
My favourite is chicken breasts stuffed with garlic and mozarella, wrapped in either parma ham or some smoked streaky bacon, and a few sundried tomatoes with basil to go with it.
Eggs are ace too, any amount of possibilities there.

Roasted root/winter vegetables, etc:
Sweet potatoes, butternut squash, beetroot, parsnips, onions, etc are all delicious peeled, chunked, marinated in herbs, garlic and a splash of olive oil, then roasted in a medium oven for 30 minutes or so.
I make huge batches of this and combine it with salad greens, feta cheese, tomatoes and pumpkin seeds as a meal in itself, or with cucumber raita/tsatziki as a sandwich filler.
Also works well with ham/sausages, salmon or chicken.

With cooked pulses and beans add some chilli then mash
