We often buy our eggs from the local farm shop and as a result, they dont come with "use by" dates on them. I've no idea how old they are when they sell them, but I normally assume I have 2 weeks from buying them to when they should be used.

However, I occasionally find myself with 3-4 eggs that are over 2 weeks old and I'm not sure if I should use them of not.

So, how do I know when eggs are "off" ?

put them in a glass of water, if they stand on end, they are a little bit off

if they float they are well off

Before frying an egg, crack them into a glass first, have a quick sniff. Nothing worst than the first one is fine, and you then crack another into the pan, and its off?

If they're kept in the fridge then I'm sure they'll be fine.

One symptom of eggs getting older is that the 'thing' that contains the yolks become weak and much more likely to break, as you crack them.
