Hi,

I can't afford a whetstone and I have no idea how to use a knife sharpener so could somebody do it for me? Obviously I'll pay P&P and also some extra if you want. It's a Global Chef's knife.

Google for Minosharp for their Global Knife Sharpener.
Dead easy to use (bit of water under the stones, run blade through a few times) and effective. Many rate it best, short of a whetstone.
If the blade is seriously damaged, knife crime requires professional sharpeners to hold a licence (because thugs will always use a cutler rather than sepnd a fiver at Robert Dyas). If you can't find one, try asking a friendly independent restaurant that you're a regular at. ask them to drop it in their next batch (every week or fortnight) - about a tenner a knife

ill do it for you no problem, im a chef and happen to have a set of shun japanese knives so am quite good at sharpening that type of blade. drop me a msg if youre intrested!

I bought one of those for my Global Knives and it did naff all then broke, I think they only work if you use them from the start, they won't recover a dull blade IMO.

it is possible to recover a dull blade the old fashioned way, with a whet stone and a good diamond knife steel! always does the trick for me!

Can you afford 22.90? that will buy you a very decent 1000/6000 grit Japanese waterstone, which is the best thing for sharpening japanese knives.

I would offer to sharpen it myself, but I'm perhaps a little too far away from you.

I've got the two wheeled version, and it really is very good - used it my global knives, some very old Sabatiers, and some cheap knifes, and it worked wonders on all of them. Highly recommended.

Holy bejeez things have moved on, I just use a Steel, use it every time before I cut. Not exactly a science to use and effective.

My father used to sharpen knives on the doorstep, however I find that the 'proper' sharpening gadget is a quicker and far more effective way of doing things. wink

You sharpen a knife with a stone and then use a steel to straighten the now-sharpened blade. A steel doesn't sharpen it straightens so it's correct to use a steel regularly but you still have to get the stone out fairly regularly to make the blade worth straightening.

Any knife with a non-serrated edge can be sharpened with a stone.

Yes, I think this looks perfect! I was originally looking at Global ones which were 40 quid but this seems a lot more reasonable. Getting mixed reviews for the Minosharp, so think I'll just go for this.
