My OH, being pregnant, seems to have developed cravings for mushrooms. Quite honestly, I'm getting a bit bored with making mushroom bruschettas, mushroom omelette & mushroom risotto so i'm calling on PH to give me a bit of inspiration!

What are your favourite mushroom recipes?

Open the bin, throw them in.

Eat some real food.

hehe

I'm not a fan as you may have guessed.

I believe mushroom risottos are enjoyable for those who don't vom at the sight, smell or touch of Satans Ground Fungus. My sister has a nasty habit of grilling them with chees and chillis on top.

Ehem, anyway.

Our chef makes a great mushroom stroganoff. Remind me/PM me and I'll grab the recipe off him for you.

Also, thanks to a visit by a PHer and his wife's request we have a great seller of baked field mushroom with rocket pesto and camembert. Easy to do, again, I'll get the recipe if you like.

I would love the Cheese & Spinach recipe there http://www.mushroomrecipes.org/Large_flat_mushroom...

Used to regularly stay at a Holiday Inn where they had a similar thing as a starter - was just a very large mushroom with small potato cubes, bacon bits and melted cheese. Was almost a meal in itself.

Actually, I think she can eat all of the ingredients in that recipe. It looks like a go-er!

Stuffed Portabellos?

Up-end the mushroom and cut out the stalk. Stuff high with likely gubbins such as browned onions, diced smoked bacon, thyme, yesterday's blitzed up ratatouille, or risotto, whatever. Just make sure you've got some breadcrumbs mixed with parmesan and a drizzle of olive oil to finish.

Then just bake in a med-hot oven until brown on top and cooked through. During which time, you can make a start on M E A T as suggested above.

For a satisfying one, how about portabello fries?

Slice into strips, coat lightly in flour, eggwash them, and roll in a mix of breadcrumbs, salt & pepper, and anything else you fancy. I like a bif of kick, so habanero flakes in my case.

Chuck in a frier for few mins, ad voila! The unborn will LOVE IT.

Get a couple of really big portabellas, cut out the stalk as above, smear the gills in garlic butter, add a bit of thyme and make them into a baggy tin foil parcel for the barbecue. Cut a vent in the top for the steam to escape and let these cook for 30 mins or so, after which they'll be like steak.

However I have read that wild mushrooms shouldn't be eaten in large quantities. I haven't been able to find anything specific about eating these in pregnancy, but I'd imagine the advice is 'don't'.

fry a finely sliced onion for a minute, then add 2 crushed garlic gloves, slat, pepper and 150ml of dry white. when the wine has reduced to half the volume, add mushrooms for 30 secs then the thickest cream you can find until the desired consitency is achieved [usually 150ml again]. warm through and serve over pasta. add ham/bacon as required.

Mushroom Tag

chop a couple of small shallots and add
250 grams chopped wild mushrooms, cook both in butter till soft

add a good few spriggs of thymne then
add 300ml amontillado sherry, reduce the liquid by half add 300mml chicken stock, reduce the liqid by half, them add 300 ml fresh cream and reduce by half

pass though a fine sieve keep in a warm place

fry off another 250 grams of wild mushrooms in butter

cook some fresh tag

add the nearly cooked pasta to the mushrooms then add the sauce, i last blob of butter for extra shine

What about making her a mush-kini. One field mushroom for the g-string bit and two cup mushrooms for the nipples. Or surprise* her and wear it yourself.

portobello mushroom for the big swinging dicks
