Afternoon all,

I will be buying a nice big steak tomorrow and have no idea how to cook it.

Any ideas/tips would be great, the size will be about 12oz and i like it well done.

Cheers, Austin

If you like it well done, you're probably better off with a good beefburger smile

Oil/season meat, use a dry pan. I turn mine every minute for around 8 minutes then allow to rest on a warm plate.

Rub in olive oil and season with pepper only. Leave for 20 minutes on the side before cooking (if it has come straight from fridge).

Heat griddle for 5 minutes or so until smoking.

Sear for a minute on each side. Pop into 200c oven, I roughly go by 2 minutes for each stage. If rare, no need for oven. Med/Rare 2 minutes in oven, Medium 4mins etc etc...

Remove and cover with tin foil and rest of 10 minutes.

Serve with no sauce.

Put the pan on the hot ring of the AGA, sear both sides, move the pan to the cold ring and cook each side for 10 minutes, it comes out soft as anything and lovely.

what he said. i heat a skillet until its smoking away, and have the oven at 140ish [non fan assist]. i also wipe a small nob of butter [like 1cm cubed] on the top of each steak before it goes in the oven. perfect steaks everytime.

rub in maldon salt, cracked pepper, finely chopped rosemary, thyme and crushed garlic.
Lush, Flame grill if possible or hot pan

eta - butter as mentioned above. The source of all great tastes and heart problems!

Rub it with half a garlic clove before serving, then a knob of butter to gently melt on top.

Stunning.

What's the advantage of letting the steak stand after cooking it?

It allows the meat to relax meaning it's more tender. Or something.

OK, didn't know about that.

All these food threads are making me hungry and for some reason the grapes on my desk aren't doing the trick

Walk the steak briskly through a warm room. Serve.
