With BBQ here finanly - im after some new marinades to try out smile
So what can you lot recommend and prefably some recipies wink

Thanks will give it a go.
They seem to have plenty of decent marinades as well smile

Here's a new discovery: it's so simple and yet has made people exclaim: "This is wonderful!"

1 part light soy sauce.
1 part dark soy sauce
1 part Thai Fish sauce.

Mix with finely chopped or crushed garlic, and some chilli powder. Ground ginger optional.

Marinate the meat for several hours. I have done chicken and Guinea Fowl successfully.

BBQ spooning the marinate over regularly.

Mmmmmmm.

No marinade need for a beer but chicken.
Can of beer up the chickens ass stick it on the BBQ in the words of Gordon Ramsey

I guess you could probably add honey or sugar to create a sticky glaze too. Ever tried it Don?

I guess you could probably add honey or sugar to create a sticky glaze too. Ever tried it Don?
Not with this particular one. I have however stirred in a teaspoon of ICING sugar () into the last of a marinade to make a glaze many times. Icing sugar is important as it dissolves quickly when you are in a hurry.

For ribs I like a spice rub, normally consisting of

Salt
Pepper
Chilli powder
Smoked Paprika
Ground corriander
Ground Cumin
Cayene Pepper

Then the ribs go on the barbie at the end of the barbie away from the fire (i.e. not over direct heat). Then stick the lid on and roast them for as long as you've got, at least 4 hours. For the last half hour spoon over some home made bbq sauce (mines is tommy ketchup, brown sugar, tabasco and mustard) which will glaze them and make them nice and sticky. Serve them with more of the bbq sauce.

beer steams the chicken and keeps it really moist, as well as adding flavour. The matrix is telling your brain its juicy and delicious, even though you know its had a can of Spitfire up its arse.
