Suggestions on what to do with either of the above rather than the usual please folks?

With the pork loin I'd be tempted to season them, pan fry quickly, remove, then de-glaze with a splash of dry sherry, then add some cream and bubble down for a bit. Serve with some sauteed spuds and some greenery.
