Decent, reasonably proced restaurant in central Edinburgh?

Introducing the other half to the delights of Edinburgh next weekend. Can anyone recommend any decent restaurants that aren't overly expensive? Open to most types of cuisine, but must be reasonably central.

Mrs Dibble and I went to Valvona and Crolla last time we were there for a few days - it was easily the best place we ate at. It's just behind Harvey Nichols, and there's a cafe downstairs, restuarant upstairs. Good food, good service, good wine, reasonable prices.
There was also a pub we went into near here, which had a massive selection of "snacks", mostly seafood type stuff. We didn't eat there, but it's on my list for the next trip. As soon as I remember what it's called, I'll update.
