Storing Chopped Chillis & Garlic?

I've got some time off coming up, and thought it would pass a few hours to chop some of the mountains of chillis and garlic cloves that I seem to have accumulated recently...
I've got suitable jars, but what's best to keep them moist? I suspect some sort of oil, but what type?
The pre-chopped stuff in the supermarket is in vinegar
so not only needs washing before use but no doubt loses a lot of its flavour as a result.

I think those 'lazy chilli/garlic' things are stored in vinegar?

TI've been freezing in ice cube trays for ages. Chilli you can get away with using from frozen if you have to if you are adding it after the frying stage (ie there's already liquid there) - not ideal but basically works.
Garlic/Ginger you need to defrost first, otherwise when you're frying it off it just doesn't work properly as the water just boils away and makes the oil go odd (no idea what the reason is but oil+water ain't a good combo)

I'm going to be off work and housebound for several weeks after surgery, and I really don't handle boredom well... I'm trying to think of as many things as possible to fill the time!

t, and to have to defrost a cube of frozen pre-chopped chilli or garlic would probably negate any benefit of doing it in the first place.Oh well, pass the porn
