Can you be arsed cooked for just yourself?
I used to, but finding the inspiration increasingly hard to come by, especially when you get home from work late.

Cook something like a shep-pie or Chilli - lots of it, then mic it on other nights for a very-quick decent meal.

I have been there, make one day a cook day i used to on a friday a good bottle of red while cooking mmmmmm you got it, then you can intraduce some one to your friday cookday there you go

Thing is, I am a fairly decent cook and I really love food and wine. Just cannot be bothered when its late and there's nobody around to appreciate it.

Think I am just having a st day at work and venting spleen...

After a long spell of living with someone, now back on my own, I go through those periods - why make the effort just for me...
I often go through periods of cooking the same simple (dull?) dishes for a few weeks, until I get motivated again.

Almost all my friends locally are married and most with children, so inviting them around for an informal bite to eat isn't an option.

If it is really 10pm 'late' don't bother, it isn't that great for you to eat so late anyway. Have some fruit instead.

Devote a few hours at the weekend to make big batches of stuff for the freezer. An assortment of soups would be great, as you can go freezer->microwave and they are light enough to eat late.

Alternatively, just eat a brie baguette every night. A few weeks of odd dreams should help your motivation return! wink

Oh I know that feeling, I go through spells of being really enthusiastic one week and trying new things (like this week!) and then go back to the simple, can't be arsed dishes like jacket potato or chicken and bacon salads.
I've never done the freezer thing, but am thinking about trying it with a lasagne or something and seeing how long the little tubs sit in my freezer - whether i use them or not...

learn a dozen or so quick recipes - stuff you can cook within 20 mins

means you can have a beer/glass of wine and unwind before settling in for the evening

I think that's exactly it, Stu. Its not that I can't do it, its why bother. That said, I do love throwing a dinner party.

Just cook vast amounts of stuff like beef stew goulash curry's etc box them up and freeze them,Then take your pick on the night of your choice smile

I suffer from this too. I like cooking but don't see the point in slaving away over a hot stove for a meal for one.

I will ocasionally 'cook' a frozen pizza but I don't cook-then-freeze meals because I usually forget to take them out of the freezer to defrost. So when I get home and check the freezer it's like "oh, I could have had xxxx if I'd have taken it out of the freezer this morning". I'm just not that organised.

I usually end up having pasta with a sauce mixed in or I stock up on Waitrose soups! I don't even have a microwave to do jacket spuds or reheat leftovers.

I too suffer the same problem, and freezing food for me doesn't work - I like everything fresh boxedin

Thankfully I'm moving in with two good friends, so it will be nice to share the cooking and make something more adventurous biggrin

Certain things are easy to make and freeze in batches so that you can add 'fresh stuff' later. I keep supplies of basic tomato sauce, basic curry sauce, chicken stock, and pizza dough.

today was a pair of sweetcorn, swiped with butter and then a multivariety pepper mix - red, white, green, blac and long pepper - nice and spicy

having some bread, smoked salmon, tomatoes, blueberries and cheese very soon

if doing something special, 20 mins to prep -

frozen fish from freezer, in pan with pasta, cook 15 mins ? - drain and add tomato pesto

sliced mushrooms - cooked in minimal oil, when 1/2 way done, add a few glugs of wine and 2 tsp of honey, stir into a sauce, add fresh crushed / slice garlic for the last min

rest of the bottle of some wine and sorted smile

I'm with the others here with the 'Just can't be arsed' phases but generally I'm pretty good with the making big food and freeze it thing.

Spag Bol, Chilli, and stuff like diced beef in red wine and rosemary gravy are better to make in large qtys and freeze very well, Also you can eat all these things from frozen, just dump 'em in a pan on low heat with a few fresh herbs and they're good to go in 20 minutes so no need to plan defrosting or anything.

I know there are a lot of freezer proponents here but as sleep envy mentions, there are plenty of quick and easy 'fresh' meals you can make for one. Loads of different and simple pastas (carbonara,spicy tomato etc etc), things like steak & salad/chips, roast chicken baguette, toad in the hole et al. All are easy and take next to no prep time.

That said, having not been single for a good 7 years, I could be talking out of my arse. These are the types of things I make when the missus is out though.
