Sounded great until the grated cheddar cheese; I doubt that will go well with the pancetta.

50/50 Parmesan and breadcrumbs is a pretty reliable topping.

I'd say, try the cheddar, but I'd expect the combination to be a bit much (greasy and salty, IYSWIM). You can always scrape it off!

Handful of basil, couple of teaspoons of pine nuts, clove of garlic, bit of olive oil and good grind of black pepper, whizz up in a blender (or use a hand blender) is a nice homemade pesto. Stuff into chicken breasts, wrap in parma ham and chuck in oven until cooked. lick

Slice the chicken in a crisscross cross pattern, sprinkle with thyme.

Grate lemon zest over the top and sprinkle with Parmesan.

Wrap with Parma ham, cover with cling film then flatten slightly with a heavy bottom frying pan.

Rub with a little olive oil, grate a little more lemon zest over the top and pan fry for a couple of minutes each side (dependent on how thin you battered it) turning every minute.

Serve with a wedge of lemon.
