Just bought a Duck crown in Sainsburys i'm planning on having it as a traditional roast but with maybe a red wine gravy.

As i have never roatsed a duck before, is there anything other than bunging it in the oven for required time i should do ?

Roast on a trivet so that fat can drain away from the meat.

Score and pierce the fat so that it runs.

It is nearly impossible to have chrispy skin and perfectly cooked meat unless you remove the fat layer during cooking and pop it under the grill, unless you fry off the crown skin side down in a pan until it is golden first.

I just deboned mine, wings and meat and breast.. However I did get it in the reduced bit for £2.50smilesmilesmile

Cover the skin in rock salt, and rub it off when it comes out. Nice crispy skin then.
